Traditional Oak Smoked Salmon (Gin Cured)

We are delighted to introduce our latest addition to our product range. Our Gin Cured Smoked Salmon was conceived in partnership with a local, world famous distillery and its very highly rated kitchen. Between us we developed a completely new technique. First we fillet prime Salmon and remove all the pinbones. Then we cure it with a blend of Salt & Sugars before smoking it in our old kilns. After it is removed and chilled we slice the salmon and place it in a vacuum pouch with a unique blend of herbs spices, aromatics and of course Premium Gin. We add Juniper berries and fresh Coriander, seal the pouch and leave it to cure for a few more days in a cool dark place. After this we pack and ship it to our best discerning customers !

We offer 200g packs and whle sides that are around 1.4 Kg. Sides can be supplied uncut for you to slice at home or hand sliced to the skin for dinner parties or home catering.

    blend.pngtick.jpgThere are some recipes that call for smoked Salmon to be blended with creams or cheeses & herbs so it is possible to use this method but once opened and blended dont keep it for more than a few days. 
    fry.pngtick.pngIt is certainly possible to cook this in a frying pan or skillet, shouldnt be necessary to add oils but ofen used to add character to Scrambled Eggs.
    microwave.pngtick.pngThe product can be microwaved for a short time on a moderate power, can be cooked "Dry" or "Moist" in a little water, but preferrably without additional moisture.
    grill.pngtick.pngSame as above... it is possible to grill for a short time depending on the thickness of the product, but will not need long to cook.
    simmer.pngcross.jpgPossibly in Rissottos and fish stews / stocks but not normally on its own.
    steam.pngcross.jpgAgain if mixed into a Rice Dish then it is possible to steam but normally a delicate fish like this would only need to be added towards the end of the cooking process..
    storage.pngtick.pngUnopened and refrigerated you can keep this product to about 3 weeks in the vacuum pack, You can freeze it in a domestic freezer but once opened use within 3 days. Be aware Gin Cured Salmon it pretty well protected from bacteria but please be aware of proper storage once opened.
